Fathead pizza or even zucchini pizza crust are great and all, but making the crust does take some effort. These mini keto pizza bites are ready in just 20 minutes, with much less work. They’re very similar to eggplant pizzas, but smaller.

This is the best zucchini pizza bites recipe for many reasons! It tastes delicious, is packed with veggies, AND takes just 20 minutes to make. Here’s how we make them:

  • Roast zucchini rounds. Arrange zucchini slices in a single layer on a prepared baking sheet. Spray with avocado oil spray and sprinkle with salt and pepper. Bake until just crisp-tender, about 5 minutes.

Followed by mozzarella cheese, Italian seasoning, and pepperoni quarter slices.

Click on the times in the instructions below to start a kitchen timer while you cook.

  1. Preheat the oven to 400 degrees F (204 degrees C).

  2. Line a baking sheet with foil or parchment paper. Arrange zucchini slices in a single layer on the sheet. Spray with avocado oil spray and sprinkle with sea salt and black pepper.

  3. Bake for about 5 minutes, until zucchini just barely starts to soften.

  4. Top each zucchini slice with 1/2 to 3/4  teaspoon marinara sauce, 1/2 tablespoon mozzarella cheese, a sprinkle of Italian seasoning, and 3-4 pepperoni quarter-slices.

  5. Bake for 8-10 minutes, until cheese is melted and zucchini is soft.

  6. Turn on the broiler. Place the pans closer to the broiler and broil for 1-3 minutes, until cheese is browned.
